I'm a pretty big fan of food!...and cooking...and also all things mexico..bit random but lets just go with it! So my very favorite thing to do/cook is Mexican nights with the main attraction being pulled Pork..and Tequila obviously!
Pulled Pork
This has become something of a favorite among my family and friends and I get quite a lot of requests from people to either make it for them or give them the recipe. Now any excuse to make it for people is absolutely A.OK with me, as i could probably live on it forever! but giving away my top secret recipe is another matter entirely!
-essentially you get a pork shoulder and and a big pot and add in flavors of your choosing (im choosing for my secret recipi to stay secret for now...how else will i impress people! ;) but there are loads of brilliant ones online!) Add some stock to you pan to about half way up the meet...do not cover it completely in liquid, and put a lid on it.
- you then put your oven on 200/250 and put the pot in, leave it for roughly 8 hours....turning your oven down slightly towards the end.
-keep checking it if your not sure...as long as its not burnt and you have decent crackling your good to go!
-take it out of the oven and remove the crackling carefully! put this to one side to enjoy later!
-Take two large forks and shred the pork...if its cooked right it will just fall apart!
serve with anything you like really, i usually go for:
-home made humus
-tortilla chips,tacos or wraps
-salad
-fresh chilies and limes
- re-fried beans (i cheat and buy these in a tin)
-lots of tequila/tequila based cocktails!
I usually also get out my Mexican table decorations..because yes i do actually own things like this!...including until recently two inflatable cactus's!
These usually include my stripy table runner, multi-colored LED fairy lights brightly colored glass candles/tea lights and lights that look like chilies!
a word of warning...too many Tequilas and it is highly likely that by the end of the night you or someone else will probably end up wearing the fairly lights...usually me!
