Eat Your Greens! -Homemade Pesto recipe

As promised this is a post about one of my favorite things to make. Home made pesto may seem like a bit of a hassle...especially when you can so easily just buy a jar of it from the supermarket! However if you are anything like me, when you have tried the home made stuff you will never want to eat anything else ever again!

There are so many reasons that i love this recipe:

1. its really simple to make, you only need a few ingredients, you throw them all in a blender and you have lovely bright green goodness in seconds

2. It's super versatile! you can eat with pasta, as a dip for crisps or bread and i think it goes great with roast chicken or a cold meat selection

3. It is amazingly good for you! for a start it doesn't contain any nasty additives, preservatives or excess sugars like the Pre-made stuff will (I try my very best to avoid processed foods as much as i passably can!)

4. It contains raw garlic...although this may put a lot of people off, if used in the right way raw garlic tastes absolutely amazing and not to mention it is a superfood and again ridiculously good for you!

I'l shut up now and just give you the recipe shall i so that you can crack on and try this for yourselves! :)

- 1 large bunch of fresh basil
- A bag of pine nuts
- 3 tablespoons olive oil (add more to taste/achieve the consistency you would prefer)
- 2/3 cloves of fresh garlic
- About 2 teaspoons of Parmesan...(more if you prefer it stronger!)

Put the whole lots in a blender and blitz to you get a pesto consistency you are happy with!
