So this week my parents took a little trip up to Newcastle to stay with family so me and my boyfriend had the house to ourselves! As i may have briefly mentioned i have been put on some seriously strong anti-antibiotics and we are both on a bit of a spending freeze! so we decided to have a pretty quiet, lazy weekend.
Since i have been made to sit through the harry potter films marathon with him, it was now my turn to make us watch all three Lord of the rings films...extended versions! :) which i was so so excited about! (he wasn't quite so enthusiastic)
To soften the blow a little bit we broke it up with some amazingly yummy home made food! Since I was spoilt on friday night with an amazing seafood paella, it was only fair that I took my turn on the sunday!
So i thought id share one of my favorite go to recipes, perfect for when you don't have huge amounts of time but want something tasty and really healthy!
Stuffed peppers!
So to make these, you will need:
- Peppers
- Basmati rice
- Chorizo
- Cashew nuts
- Garlic
- Sweet potato
- Chili flakes
- spicey mexican cheese
Then follow these simple instruction:
1. Set your over to about 200/250 degrees.
2. Cut up your sweet potato and garlic. Place on a baking tray and add the cashew nuts, some chili flakes, salt and peeper and drizzle on some oil before putting in the oven to bake.
3.In the meantime, put some rice on to boil
4. whilst this is all going on you can cut up your chorizo, grate some cheese and prepare your peppers. I do this by cutting off the tops, removing the seeds, drizzling with a tiny bit of oil and baking for about 10 minutes in the oven.
5. When the rice is cooked, drain it and leave to stand for a minute to drain. using the same pan (saves on the washing up!) fry off the chorizo. When this is done, re-add the rice and stir well.
6. Take your tray out of the oven and add your roasted sweet potato to the rice, again string well.
7. Add about half of your grated cheese to this mixture and continue stirring until it is all melted.
8. Then spoon your mixture into your peppers, sprinkle with the remaining cheese and pop back in the oven for about 15 minutes, or until the cheese is lovely and crispy on top.
9. If your anything like me you will have loads of rice mixture left over and you definitely don't want to waste it. I put this in a little backing try, sprinkle with some cheese and bake for the same amount of time as the peppers. its great served alongside your meal for anyone who wants a bit extra!
10. plus its great as leftovers the next day!...my boyfriend swiped this for his lunch at work on Monday! :)
