Classic Fairy Cakes With a Girly Twist

Like a lot of people my Grandma's taught me how to bake and the first thing we ever made were fairy cakes. They are a true childhood classic.



A couple of weeks ago my Grandma came for tea and although she can't remember an awful lot now, I thought that it would be nice to make some fairy cakes for all of us to eat after our meal. 

Alongside the obligatory wings and butter-cream I gave them  a little bit of a girly twist. I used bun cases decorated with little hearts and finishing them off with some freeze-dried raspberries and glitter! (The kind of decorations my 5 year old self would have gone crazy for!)

The recipe is so simple and yet these little cakes are a guaranteed crowd pleaser every time. we all need a little bit of nostalgia from time to time! :) 

Recipe: 

Cakes 
100g butter 
100g sugar
Teaspoon baking powder (gluten free) 
Teaspoon Xanthanum gum 
Teaspoon really good vanilla extract
2 Eggs 
200g Plain gluten-free flour 

Butter Cream ( I do this bit by eye
Icing sugar 
Butter 
Vanilla extract 

Method 

Cream the butter and sugar together until soft and fluffy like clouds, then add your eggs and vanilla extract, before adding all you sieved dry ingredients and gently folding until all combined. 

Divide into bun cases and pop in a pre-heated oven for about 12-15 minuted or until golden brown and bouncy on top. 

At this point you are allowed to lick out the bowl and the spoon (just like you used to when you were little!) 

Then make your butter-cream and pop it into the fridge until your buns have cooled down. Pop the middle bit out with a knif and cut into two before adding your butter-cream and re-positioning your 'wings'. 

Sprinkle with glitter and serve! :)
