My WHOLE30 Diet, Days One to Three

So I have been doing the whole30 for three and a half days now! Turns out lots of people that I have talked to decided to start their diets today instead, which at fist made me feel a bit cheated out of one last weekend of stuffing my face with all of the leftover Christmas chocolate.

However now I am pretty pleased I did as I can already cross off three (and a half) days of a diet that I am already finding a little bit challenging. I am also really glad that I started near a weekend as I think this will be the hardest time to stay focused...I really did miss my Friday night wine! :(

So far I have been enjoying lots of Omelets for breakfast, which Is kind of weird as this last few days is probably the fist time I have had breakfast three straight days in a row for years!!

I have been so full that by lunch time I have usually only managed a little bit of soup and a handful of nuts. I made a parsnip, chili and ginger one the other day but there was no fresh chicken stock in and it was a little weird to leave out a stock cube.

Evening meals have been easier than I thought so far. I do the majority of the cooking at home so I make sure its Whole30 compliant  for me and then serve everyone else's with something like rice or pasta, whilst I stick to salad.

The hardest thing I found was going without my morning brew! It was horrible, I had black tea or green tea which are nice but not the same. Luckily yesterday I managed to find some compliant almond milk and all is right with the world again, in-fact I think I may prefer it to regular milk :)

I have also ordered myself some Tapioca flour, something I am used to working with on my normal gluten free diet but this time I bought in bulk...I'm looking forward to it arriving as my Zuccini fritters from the other night were looking a bit sorry for themselves without anything to bind them together!

The best part about the diet so far is that is so nice to wake up feeling completely fresh and well-rested, instead of slightly hungover or bloated due to too much over indulging. and the little nagging voice in my head that says 'now you really shouldn't have eaten that, should you!?' has completely gone! :)
