Comfort food :)

We all have those days where we just feel like we need a big BIG hug! my favorite thing to do when im feeling like this is cook!

One of my all time favorite comfort foods has got to be macaroni cheese! Its perfect when I'm really hungry and feeling a bit down and don't have the energy to make a big effort in the kitchen.

Iv messed around with a few variations on this classic dish! And come up with my favorite version!(it's my comfort dish and I'm usually the only one eating it,  so iv personalized it to exactly how i like it! feel free to add your own cheery twist!)

It goes a bit like this;

- Boil some water and cook yourself some pasta (I use gluten free pasta obviously but any is great, as long as its not spaghetti or tagliatelle or anything...that wont work!)

-whilst the pasta is cooking make yourself a roux/white sauce using butter, milk and flour....then when this is nearly done add grated cheese and stir till well melted. I then add a generous amount of black pepper and some chili flakes.

-when your pasta is done drain it and add to your sauce, mixing well. Pour into a baking dish.

- I then sprinkle with gluten free porridge oats, some more grated cheese and a bit more pepper and chilli. Then back in the over for around 20 minutes, or until nice and crispy on top....but not burnt!

-I sometimes have mine with some grilled cherry tomatoes topped in chilli flakes. And if I'm feeling particularly greedy I might add some grilled, crispy bacon or a bit of fried chorizo.

Guaranteed to make you feel full up and happy with minimal effort. Ultimate comfort food! :)
