Every party needs a cake!

So this weekend we had a belated family party for my aunties 50th birthday. I had committed to doing all of the cooking for this feats,so still in 'taking it easy' mode I got myself a comfy chair in the kitchen and cracked  on with some cooking and baking...all gluten free of course!

Considering it is allergy awareness week this week i thought id share a new gluten free recopies that I tried out!

Now every party needs a birthday cake, but gluten free baking is notoriously more difficult than regular baking, I decided to use a new gluten free recipe book that my sister got me for Christmas  chose the coconut and lime cake recipe as it seemed a bit more interesting than a standard sponge!

I think it worked out okay...i liked it anyways...the only thing that may have gone a tiny little bit wrong was that i tried to colour it green with food colouring...to make it a bit more interesting, unfortunately it didn't quite work and the cake did have a certain 'gone-off' look about it. Ooops! (it tasted nice though,I promise)

Recipe: 

Cake:175g Unsalted butter (plus extra fro greasing)
175g (60z) golden caster sugar
3 eggs, beaten
175g(6oz) gluten free self raising flour
1tsp gluten-free baking powder
60g(2oz) desiccated coconut
160g canned coconut cream/milk


Icing: 
85g(3oz) unsalted butter, softened
350g (12oz) Icing sugar
Finly grated zest and juice of 2 limes
1tbsp desiccated coconut, toasted

Method:

-beat your butter and sugar together until light and fluffy. (I usually use an electric mixer for all of this)
- slowly add in your eggs and the coconut cream/milk
-Then add in the dry ingredients: flour, baking powder and desiccated coconut, i also usually add in a bit of xanthanum gum as well as it helps with gluten free baking!
- mix together until all is combined and poor into greased cake tines.
- set your over to about 180 and leave to cook for about 20-25 minutes, or until a skewer inserted into the middle comes out clean!

- put all your ingredients for the icing in your mixer and beat until the right consistency is achieved. add to the layers of your cake...when fully cooled

I trippled the quantities of this recipe because i wanted to make a really big cake! :)



Decorate as you wish! i chose to ice it with a spring picnic theme, it was a birthday cake after all!
