A Healthy Fish Dish!

Salmon is basically my favorite food ever! It's got everything going for it pretty much! It is packed full of omega 3 oils! and its super low in fat so it really is amazingly good for you. My favorite thing of all though is how incredibly versatile it is! It goes with so many yummy things that you never get bored of it!

My very favorite thing to do with salmon is make my salmon fishcakes...they have become some what legendary in my house as they were one of the only things that I used to cook for my family, and I cooked them a LOT!

This is how you make them:

1. You get a big bowl and into that you put:
- freshly chopped up garlic
-as many chilies as you fancy ( I like to use about 3, but you can scale this down or leave out completely if you prefer!)
- the zest and juice from one lime
- freshly grated ginger
- a spring onion or two
- and if you have it in ( I didn't the last time I made these) A big bung of fresh coriander, all chopped up

2. Chop up your salmon nice and small and add to your bowl of ingredients, you can leave in the fridge at this point to marinate if you don't want to make them straight away.

3. Next add flour and an egg and mix until the mixture starts binding together

4. Heat some coconut oil or regular oil in a pan until really hot and place small handfuls of mixture into your pan. press down with a fish-slice and turn over when one side is golden brown.

5. If you are making a lot of these in one go I usually turn the oven one and place the cooked ones on a baking tray to keep warm whilst I finish off the rest.

6. Serve with anything you fancy really! I think salad and rice works great, especially if you squirt a bit of fresh lime juice over the top and put some sweet chili sauce on the side of your plate!





 I wish I had a picture of the finished result, but unfortunately we were all very hungry and they were eaten up beofre I got the chance!
