So this week I have been changing up my eating habits a little bit make sure they are really healthy! I have been replacing one of my main meals with a healthy home made soup instead and as often a s possible I have been having my main meal at lunch time and soup for tea.
It's working really well, but it does take a little bit more planning and organisation in the evenings. I used to pre-prepare all of my meals whilst I was at uni but since starting work I have gotten a little bit lazy. I'v been getting back into the swing of things as the week has gone on and it definitely helps that soup is so easy to make and you can make a lot of it in one go, perfect for freezing!
The first soup I made was carrot and coriander

The first soup I made was carrot and coriander
- I chopped up some garlic and put in a pan with a small amount of olive oil, loads of ground coriander and some chili powder.
- I chopped up about 10 carrots and half a butternut squash and put in the same pan. I added boiling water and a stock cube and left to simmer for about 40 minutes on a very low heat.
- When this was done I added pepper, chili flakes and a tiny bit of salt and blended to make a smooth texture.
- I then divided my soup into separate containers and put most of them in the Freezer!
I can't really take credit for the second soup as tom decided it was his turn to make one, but it was really good so i thought id share it too:
- Cut up 2 large sweet potato and a red pepper, Put on a backing tray with a light drizzle of oil and some garlic.
- Roast in the over for about 30-40 minutes until everything is nicely roasted.
- put everything into a pan, add boiling water, chili flakes and a stock cube, gently heat and then blend until smooth.
I really is so easy to make soup and all that is in it are lots of healthy vegetables. Soup is also scientifically proven to fill you up for much longer so it really is great!
