Great British Bake Of Challange

Bake off Is Back! and I for one am incredibly happy and a little bit excited about this! It is hands down, my favorite TV program :)

It all kicked off on Wednesday and for the last couple of days I have been giving this post some serious thought. A couple of years ago I attempted to work my way through the bake of challenges, doing a bake a week and ticking them off my list.

I thought it was a great way to get involved as well as learn really useful quite technical baking skills and try some bakes I had never attempted beofre. It was a lot harder than I thought it would be and I never did finish it!

However after the start of the new series I have, probably stupidly, decided to set myself a similar challenge. Each well I will attempt one recipe from that weeks episode!

For this first post I will share a recipe that I learn't last time I tired this challenge (having never previously baked a quiche before)

Super Quick Quiche-Lorraine

1. I confess that for this quick version I cheated a tiny bit and didn't make my own short crust pastry..do you have any idea how crumbly gluten free pastry is to make!!

2. Put this in a greased tart tin, cover with greece proof paper and baking beans and back until a light golden brown. About 20/30 minutes.

3. In the mean time mix 5 eggs, 200ml of double cream and a generous amount of grated cheddar cheese into a bowl and whisk up.

4. pour a packet of parma ham or bacon into a pan and fry off until nice and crispy.

5. add the bacon to the cream mixture and pour into you pastry case when cooked. Then pop it all back into the oven for another 20/30 minutes before serving!

Enjoy!

and wish me luck!

Thank you for reading :)
