Wednesday night is Date Night. #2

So it's only Tuesday but I thought it was a good time for a bit of mid-week inspiration! (and it gives you  just enough time to plan your Wednesday night!)

It's not every week when we get a chance to do this, but some Wednesdays, after particularly busy or stressful  days at work, or when we are just desperate for the weekend to hurry up!  we make a conscious effort to celebrate the mid-week in style. This usually involves one, of both of us cooking something yummy...and a bottle of wine! :)

This is what we had last Wednesday: Sweet potato and chorizo risotto and some seriously good Argentinian malbec!

Risotto recipe:

You will need.
- Garlic
- half an onion
- olive oil
- paprika
- 4 sweet potato
- 1 bag of risotto rice
- chorizo
- cashew nuts
- Parmesan cheese (optional)
- stock/a stock cube

- Firstly you want to cut the skin off your sweet potato and cut up into small pieces, place on a baking tray with some olive oil, salt, pepper and some chilli flakes.And some whole cloves of garlic if your feeling adventurous. place these in the over to cook fully for about 20-30 minutes.

-Then cut up your chorizo and fry off, once cooked and crispy remove the chorizo from the pan and put to one side. Make sure you keep the chorizo oil in the pan and fry off your onion and garlic.

- In a jug pour about a pint and a half of boiling water over your stock cub and add a generous teaspoon of paprika and some chilli flakes.


- Next add the risotto rice to your pan and stir for a minute or two before adding your first lot of stock.
When the stock has been absorbed add the next lot, string all the time so the rice doesn't stick...this can take a while so it defiantly helps to have a glass of wine in your hand at the same time...drinking whilst cooking is one of my most favorite things!



- Check on your sweet potato and when cooked add to your rice, along with the chorizo. Stir and turn the heat right down to the rice is cooked and all of the stock has been absorbed.


- Finally serve with some salad leaves, put your feet up and dig in! :)
