Gluten Free KFC

I haven't been able to have a KFC for a few years now and even though I'm not a huge fan of fast food I do occasionally miss being able to indulge (particularly when your boyfriend is a particularly big fan of it!)

So on Sunday me and tom decided we would have a go at making our own version!..and a lot of people seemed very interested in joining us (in eating it, not making it)

Firstly we made our bread crumb mix, but whizzing gluten free bread up in a food processor. I then added flour, salt, pepper, dried herbs, chilli powder and paprika.

Next we added 3 eggs to a separate bowl and whisked them up. We cut our chicken in to small, thin strips and we were ready to start our little production line.

We dipped the chicken strips in the egg yolk, making sure that each was evenly coated, before placing them into the breadcrumb mix, again making sure each piece was evenly coated in a lovely layer of breadcrumbs.

we then placed all of these in a dish whilst we filled a deep frying pan with sunflower oil and weighted for it to heat up. This bit was the scary bit so I let Tom take over and fry all of the chicken until it was golden brown and cooked through in the middle!



We poured it all into serving dishes and accompanied it with a big green salad, some sweet potato wedges and lots of lovely sauces and dips!

Everyone loved our healthy take on KFC and it was a huge success. We will definitely be making this recipe again, only next time I'll definitely be putting more seasoning and chilli powder in the breadcrumbs!
