You know Autumn is really here when you start to see shops full of Pumpkins! and I dunno if you know this but, I love Autumn...(I may have mentioned it one or two times already I guess.)
I love pumpkins and I am always so excited to carve them and put them in the windows with little tea lights in, but I have never really tried to do anything else with them, which is silly really as they are so widely available at this time of the year, and so cheap! ..you get a lot of pumpkin for your money too!
I attempted a pumpkin soup a couple of years ago and It went so disastrously wrong! It took me all day to make and I ended up burning the garlic really badly and adding way too much stock so it turned into a very bitter, dirty looking water with bits of charcoal floating in it. Not my finest moment! It kind of put me off attempting to cook with pumpkins for a long time.
But this year I am determined to give the humble pumpkin another go and I have so many recopies I am desperate to try, including: another pumpkin soup, pumpkin biscuits and pumpkin buns.
This weekend I decided to try out a recipe that had caught my eye and looked to good not to try! I made a warm pumpkin and chorizo salad, perfect for winter!
This was all rather straight forward and really really good!
Firstly I chopped up my pumpkin and put it in a roasting tin with some butternut squash, garlic, and a small green chili. Cover the whole lot in a little bit of olive oil and pop into your oven for about 40 minutes.
In the mean time i whizzed up a home made pesto..recipe can be found here!
I then boiled some chickpeas in a pan for between 5 and 10 minutes. and chopped up so chorizo to fry it off.
When everything was ready I placed the roasted veg onto of a pile of rocket and spinach and then added some chickpeas, chorizo, a little bit of chorizo oil and topped the whole thing off with some of the home made pesto.
I served it alongside some warm crusty bread (and some gluten free wraps for me) This is one recipe that I will definitely be making again, it was amazing and the pumpkin was especially good! ;)
