The first week back after a holiday is always a bit of a rubbish one and this week has bwen no exception. I have been a bit all over the place and crazy busy this week. So much so that i completely forgot about the bake off competition at work :(
To make up for it I decided to make some cute cupcakes today. I spent agers deciding how to decorate them and eventually decided on some cute little mushrooms, inspired by pintrest of course! :)
The recipie for this is an old reliable one for me, iv been making them since I was about 5 years old so they are super simple and so easy to remember ;)...(not gluten free tho)
100g plain flour
2eggs
100g caster suger
100g butter/margarine
1 tsp vanilla essence
1tsp baking powder
cream your butter and sugar together untill fluffy. Add the eggs and vanilla essence and beat untill well mixed. Sive in all of your dry ingredients and place into your bun cases.
heat in the oven for about 20 minutes and leave to cool before icing.
