Mini American Pancakes With Maple Syrup And Bacon

My last post was about baking and this one is not very different I'm afraid. Cooking is something that is dominating most of my spare time recently and I am really getting into developing my recipes.

This weekend just gone I set myself the task of making American pancakes (gluten free ones) and serving them with streaky bacon and maple syrup.

The first challenge was getting the recipe right, I wanted them to be small and fluff, not thin and flat like traditional pancakes. This was mainly about the flour and my first attempt was a bit unsuccessful...I also failed to find maple syrup and had to make do with golden syrup, good, but not the same!



The next day I found a better recipe, the secret is using plain flour a generous dose of baking powder. I also replaced the milk with buttermilk. This gives you more of a thick batter than a mixture and its a lot better for you!

The second batch were so much more successful with my new recipe and everyone was pretty happy!



I even managed to track down proper maple syrup in the supermarket! which was incredibly...the fact that it cost £9:00 is slightly less so :(
