One Of My Favorites, Gluten Free Orange and Polenta Biscuits!

On Sundays I can't think of anything better than cooking and baking and watching the Food Network on the telly, and this weekend (just gone) was no exception. I decided to make a some of my favorite orange and polenta biscuits!

I originally found this recipe in one of my Jamie Oliver cookbooks and I have adapted it to make it gluten free.

Polenta is a great option for those on a gluten free diet as it is made from 100% corn flour and can be used in loads of things.

These biscuits are brilliant as they are so easy to make but taste amazing and go absolutely brilliantly with so many things...or you can just eat them on their own...its up to you!

The recipe is as follows:

170g of butter
170g suger/caster sugar
255g dried polenta
100g plan/gluten free flour
zest of 2-3 fresh oranges or a couple of teaspoons of orange essence (if you run out of oranges)
2 egg's

Firstly put the butter, sugar, polenta and flour in a bowl and mix together with your hands until you have a breadcrumb like texture.

Then add the orange zest and 2 eggs and mix together.

Put all of your mixture in cling film and place in the fridge for an hour to firm up, when this has happened grease a baking tray.

Scoop out a small amount of the mixture, roll into a ball and place on the baking tray. Making sure your mixture is laid out evenly on your tray, place in the oven at 150 degrees for 5-6 minutes, or until they start to go golden brown around the edges.

At this point take them out of the oven, place them on a cooling rack to cool down and then enjoy.





Alternativly you can use them with other things...I am planning to use some as a base for a chocolate orange cheesecake...they really are amazing with chocolate!! :) (recipe coming soon!)
