I am not going to lie, up until about 3 months ago I have never made a scone in my life! Now I make them at least twice a week if not more! and to my absolute astonishment they are a best seller at the cafe!
I love a good scone with jam and clotted cream, they are a proper British staple and an essential part of any afternoon tea or British picnic (and we do love a good picnic!) so I am pretty happy that they are now one of my baking staples. I have even started to test myself and I'm working on creating some decent glute-free scones. It's all a bit trial and error at the moment but I think they are very edible so fingers crossed I'l get there eventually!
With Summer officially here I thought Id share my go to, idiot proof scone recipe!
You need to start with 800g of self-raising flour and 200g of soft butter or margarine, make these into bread-crumbs..no other way than with your fingers so get in there and get your hands dirty (good idea to make sure they are super clean first tho..obviously!)
Next add 200g of caster sugar!!...I have forgotten this step at least twice and it is pretty vital so I usually make sure that I measure out the sugar first and leave it in a prominent position so it's almost impossible to forget!
Now you need yourself a measuring jug, 400ml of milk and 4 eggs! give them a mix with a fork until all nicely combined and then add them to your dry ingredients.
Mix together until you have something that look as lot like raw scones and then add your chosen flavours..if any! for the cafe I divide my mix in two and add raisins to half and glacé cherries to the other. At home my absolute favourite flavour combination is orange and cranberry! If you want to give this one a try then you need a couple of big oranges and half a bag of dried cranberries. Add the rind of two oranges and the juice of one and all the cranberries.
Tip your mixture onto a floured surface and use a round..(or flower shaped) cutter to create your scones. Brush the top of each one with an egg wash and pop into a pre-heated oven at 180 degrees for about half an hour, but keep an eye on them!!
Now all you need to do is get the clotted cream, jam and fresh strawberries ready and cross our fingers for some nice weather!!
