This Friday just gone my mum had family staying and to take the pressure of her a little bit I offered to take over the entertaining on the Friday night!
I know I cook for a living but it really is my favourite thing to do at home as well, especially when I in my own kitchen...and there is wine!
I needed something that was pretty simple to do, didn't make too much mess and would feed/fill a large group of people (8 on this occasion)
I went for something that I have made a couple of times recently for friends and family and is fast becoming one of my favourite things to make.
I found the recipe in Nigella Lawsons' Feast' a few years ago and in true Nigella cooking style it is the perfect amount of effortless but yummy!
You will need:
- 500g Spaghetti
- 50g Parmesan cheese
- 275g Pancetta
- 60ml White wine (or vermouth)
- Pepper and salt
- 60ml Double cream
- 4 Eggs
- Freshly grated nutmeg
- Firstly place you olive oil and pancetta in a large pan or frying pan (preferably non-stick) and cook on a low heat, then add the white wine and let it do its thing.
- In a large pan cook your spaghetti with a little pinch of salt, whilst that is bubbling away you will need to grate your parmesan into a bowl and add the double cream and eggs.
- When your spaghetti is cooked drain the water and quickly add into the bowl of cream ect. Add your pancetta and mix the whole thing together in a big dish
- Just before serving finish the whole things off with a generous grating of fresh nutmeg and let your guests dig in!
You can serve this with salad or eve garlic bread, its up to you! :)
