So this dish was one that my dad used to make when I was little. Mainly using the left overs from a Sunday roast...but usually always adding bacon and sometimes cheese into the mix! It was a meal I suddenly became a lot more interested in after I had watched the wind in the Willows for, like the millionth time! (it's the dish Mr toad gets given in prison by the lovely washer woman!)
So recently we have been making a huge effort in the Katie/T household to eat much more healthily! and that means, bubble and squeak is back on the menu!
It's so simple to make and you can pretty much add whatever you want, The base is mash potato and then I add garden peas, white cabbage, fresh rosemary, dried thyme and bacon (obviously!) but I left out the cheese for healthy reasons! Leeks are really great too but I forgot we had any on this occasion:(
You can serve with salad or if your feeling a bit naughty then tomato ketchup is the ultimate childhood dream. I like mine with a bit (a lot of) hot sauce! But that's a personal preference.
