It can be really hard to cook for one in the evening! I really struggle with over-catering at the best of times and getting your quantities right for one person is not easy.
Usually I would just make more and fridge or freeze it, but this week I have been feeling pretty rubbish so it was hard to drag myself out of bed and motivate myself to do a huge amount of cooking.
In the end I made something quick, healthy and really tasty using whatever I could find in the house, and it is definitely something I will be doing again!
The end result was lovely, gluten free spaghetti topped off with chorizo, olive oil, fresh basil, toasted pine nuts and chillies....lots and lots of chillies as I have a really blocked nose and I was trying to shift it!!
I cooked my spaghetti and in the mean time fried off some chorizo, pine nuts and chillies in a pan. When the pasta was done I drained it, poured over some olive oil and black pepper then added the rest of the ingredients and mixed everything up a bit.
The whole thing took about 10/15 minutes tops!
