Ice-Cream Cookies

So the weather hasn't exactly been that summary this week but I have heard a sneaky rummer that there is a big August heat-wave on the way!..here's hoping any-ways! So to get in the mood here are some Ice-cream biscuits!

I have been trying really hard to up my biscuit game recently, and what better way to do that than with some summer inspired Ice-Cream Cookies.

Sugar Cookie Recipe: 
 - 3 cups of plain flour
- 1 tsp baking powder
-  1 cup of butter
- 1 cup of sugar
- 1 egg
- 1 tbsp of milk

(you can use any sized cup for this just as long as you use the same cup for all you ingredients! Obviously the bigger the cup the more mixture you make)

Believe it or not the hardest part about novelty biscuits is getting the dough out of the cutter and onto your baking tray. Thankfully after so much internet research I think I may have finally discovered the solution!


After mixing together your dough wrap it in cling film and place it in the fridge for about 30 minutes. Then when it has chilled down roll out your dough, keeping it between two piece of cling film until you have a smooth dough, place on a baking tray and place in the freezer for another 20 minutes. 

Finally remove your dough from the freezer and you can start cutting out your biscuits! At this point its also a good idea to start heating up your oven to 180 degrees, as it is super important that your buscuits go into a pre-heated and ready to go oven! 

When all your biscuits are placed evenly on your greased baking tray you are ready (as long as our oven is too) to place them in the oven, but keep an eye on them they should only take 8-10 minutes and they are done!


Remove and carefully place on a cooling rack straight away. Do not attempt to decorate you cookies until your biscuits have completely cooled as this will just turn into one very stick, melt-y mess!

At this point you can pretty much go to town with how you want to decorate them. I love this recipe and biscuits in general as they are so versatile and perfect for pretty much any occasion!
